Herbed Potato Chips
Everyone loves them, right! And we all miss a little crunchy nibble from time to time.
I got told from different people, when I crave something crunchy, I should eat an apple.
But that doesn't work for me, when I want something savoury. I eat sweet most of the day.
Very unusual for me, because I always was a savoury lover. Still am of course.
So an apple does not replace a craving for something crunchy, savoury for me.
And, the crunch itself is simply not the same for me. For me this is a difference like day and night,...
in between an apple and something crispy baked.
I actually haven't bought any potato chips in month.
Chips are full of nasties and fat. Often fried in canola oil. But even when fried in sunflower,
this nibble is full of nasties. We all know that. So we better make our own. For special events,
when friends come over for a game evening or so, some nibbles are always a welcome.
With a delicious dip like, Hummus, Guacamole etc,... we all love it.
I actually do not eat such things any more.
But I want to be prepared when we have a special event with friends.
So I gave it a go
To only watch my friends eat,... smell all that stuff,... not so pleasant.
Even I actually feel sorry for their livers, haha. Yepp, I am that deep into everything,
that I also start to feel sorry for the liver of my family and friends. I think that is just normal,
when you are that far in the program. Everything changes. Also the way we think and feel.
Making chips is pretty simple. I like mine seasoned with herbs and spices.
You do need a little bit of olive oil,.., or use coconut if you like a slight coconut taste, to crisp the chips up.
Without oil, they just dry out. But a little bit of oil is ok!
Don't forget, Anthony never said to go complete fat free for the rest of your life.
And to be honest, I think that is not even possible. Fats are in so many things.
To cut all that out you are left with not really much. So for me, to use a little bit of olive oil to crisp the chips up,
is totally fine. And it is not that I eat a kilo of it a day. This is just for some special occasions to feed my own soul,
whilst my friends eat all that nibble stuff I used to love.
Like Salt and Vinegar chips. I know they put stuff into it to make us addicted to it.
That's why we never can stop eating after one chip. And this vinegar chips always were my favourite.
Only thinking at them makes my mouth watery.
Still,... slightly,... after all this month of not eating even one chip.
Well, I am happy with my own variation as well. I use organic potato and herbs.
Organic cold pressed extra virgin olive oil and pink salt. For me a good combo.
As for the garlic you can use fresh grated one, or powder. I am always in for the
fresh one, but powder is fine as well. I like to bake my chips with the spices.
But I think you also can mix the herbs and spices and marinate afterwards, when the chips are baked.
But I never gave that a go. Maybe I try the next time this variation. Or maybe both options.
Hm, sounds actually good to me, haha.
It's very easy to make.
You need for 1 small serve:
2 middle sized potatoes - sliced with a veggie twister
(or cut thin with a knife)
1/2 tsp dry Oregano
1/2 tsp dry Thyme
1 middle sized clove of garlic - grated
1/2 tsp onion powder
1/2 tsp sweet paprika powder
1 dash of pink salt
1/2 tsp organic extra virgin olive oil
1. Slice the potatoes with a veggie twister (recommended) or knife.
When you use a knife make sure the slices are even in thickness.
2. Marinate the potato with all the ingredients. Mix well.
3. Add on a baking tray with baking paper.
4. Put into the preheated oven (170°C - grill).
5. After 20min turn the slices and bake for another 20 minutes under the grill.
(every oven is different. Mine takes a little bit longer, because it is an old oven.
So just bake until golden and crisp. If they bake not even,
get the golden ones out earlier and give the not ready baked ones more time in the oven)
When ready remove from the oven and let the chips cool down.
