I am actually not a sweet food lover in the morning. But sometimes I really enjoy PANCAKES :-)
Specially in winter!
Pancakes are so great. You can add so much into pancakes to add nutriens and minerals.
I choose goji berries, black & white chia seeds + white & black sesame seeds.
Goji berries and chia seeds are super foods - Goji berries are even said are the most healthy berries on earth to boost your antioxidants and are also full of Vitamin C and iron! Chia is an easy way to add healthy nutrition to your daily diet, with Vitamins A, B12 and C, complete protein (18 Amino Acids), minerals including potassium, phosphorous, folate, zinc, iron, and calcium as well as bowel-regulating soluble and insoluble fibre.
So, this pancakes are a real boost to start your day!
Topped with fresh fruits, I choose banana and strawberries,
served with Organic Rice Malt Syrup (from Pure Harvest) or Organic Marple Syrup.
I made this pancakes for myself, so the ingredients are for one serve:
3/4 cup of organic unbleached plain flour,
1 tsp organic vanilla extract,
1/2 tsp bakin powder,
2 tbsp goji berries,
2 tbsp chia seeds,
1 tbsp white sesame seeds,
1 tbsp black sesame seeds,
1/2 tsp Dutch cinnamon,
1 pinch of seasalt,
approx: 200ml soy milk (can be more or less - the batter should be smooth and not to liquish),
1 small banana - sliced,
3 big strawberries - quartered,
as much Rice Malt Syrup or Marple Syrup as you like
and some sunflower oil for frying.
Add all the ingredients for the batter into a bowl.
Whisk well until you got a smooth and not to liquish batter. Set aside for 10-15 minutes.
Heat some sunflower oil into a frying pan, add the batter for a small pancake and fry until golden brown and crisp.
The batter should be enough for 3 equal pancakes. Place the first pancake on a plate and top with strawberries - top with the second pancake and top with banana and finish with the third pancake and the rest of the fruits.
Pour over the syrup of your choice and ENJOY.
I am SO delighted with this quick and easy to make "Pizza Bread". And the idea of this is just fantastic. I love it.
For the filling you can use whatever you like --- I kept it simple and Pizza like. What a great idea to either start the day with this for brekki, or to end it with a dinner.
Both works perfect for me. Well, thinking about it, it also is a great lunch idea!
We had this for dinner, with some salad on the side.
But I think I will going to make this for brekki soon. So my type of brekki. Savory :-)
To make this 2 Pizza breads I used:
2 slices of German sour dough bread
1/2 small onion - chopped
1 middle sized garlic - chopped
1/2 Landjaeger (German "Speck" replacement) - cubed
(you can use whatever bacon replacement you like)
1/2 small red capsicum - cubed
4 big green olives - cubed
For the cheese batter:
1 cup besan flour
25ml soy cooking cream
1 splash of water
1 pinch of black himalayan salt
5 tbsp grated vegan cheese Vegusto piquante
For the frying process a splash of olive oil

at the moment I try to manage to cut down on bread (carbs). As Germans we really eat a lot bread. In the morning either toast or buns, in the evening farmers bread for dinner. And for some dishes we have bread as sidedish. I think it is time for me to cut down on carbs --- so I really had to think about "what do I have for brekki"!
I am not a sweet tooth in the morning. I love a hearty breakfast. So I thought about it and all I think of was "pancakes". But I really didn't like much of the sweet version in the morning. I have one and I am so full, not good. My thought was "who said pancakes have to be sweet"!
And that was it. 3 days ago I created my very first hearty pancake dish. I didn't post it here on my page, but on my facebook page. But I will change that - my first pancake dish deserves to be here, because it really is so good.
And here is my second creation. This time gluten free!
I made the batter for 4 small pancakes with:
a handfull chopped parsley, half a middle sized carrot - grated, 3 tbsp sesame seeds, 1 dash of curry powder, 1 dash of smoked salt, 1 dash of kala namak, 4 heaps tbsp Besan flour, approx 100-150ml soy milk.
The batter should be not to liquish.
For the topping I simply cubed 5 mushrooms, 2 handfull of fresh baby spinach and 1 green asparagus.
sunflower or canola oil for frying --- you also can use olive oil of course
2 tbsp Hummus of your choice
Very simple, heat some sunflower oil in 2 different frying pans. Add mushrooms in one and fry til golden and add batter in the other and fry the pancakes. When the mushrooms are golden, add the spinach. Fry the asparagus in the same pan than the pancakes --- it will not need much time to fry.
When ready, spread pancakes with some Hummus and top with the mushroom/spinach mix.
Add asparagus and ENJOY!

Also inspired by MKR, I wanted to give that marpled bacon a go. And,... delicous! For me to sweet on its own, but in combination with the mushrooms, sauce and fritter, a real delight.
I used Tofurky Oven Roasted bacon - and it also will work great with the hickory smoked version.
You can serve this dish as well with spinach --- but for me, fresh rocket salad was the real deal. The nutty flavour of the salad gave the dish a real delicous note. This brekki is made pretty quick and is a really yummy Sunday treat to start your day :-)
For one serve I used:
1 slice of toast - toasted and spread with avocado, 1 veggie fritter, 4 big mushrooms - quartered and fried with a bit of seasalt, 2 slices of Tofurky oven baked bacon with a bit of salt - fried, a small splash of organic marple sirup, fresh rocket salad and sprinkled with my homemade Alio-Mustard-Chive sauce.
