Spaghetti Salad
Oh yes,... one of my favorite pasta salads has returned to my plate!
I finally found a gluten free pasta, what really works for this salad.
Even my partner, who really doesn't like gluten free pastas, was delighted.
I found black bean pasta at my local organic store.
The black bean is a small, shiny variety of the common bean especially popular in Latin American cuisine.
There are also black soy beans. I realised that when I saw a black bean pasta product at Coles.
When I checked on the ingredients it stated "organic black beans" and,... contains soy.
That was irritating. So I googled and found out, there are also black soy beans!
They are rounder in shape and from the inside like a normal soy bean.
Black beans (turtle beans and black kidney beans) have the typical bean shape.
So when you buy your black bean pasta, make sure to also check on the "contains" part.
When it states it contains soy,... it is made from black soy beans.
But to really make sure, contact the company who made the product.
Spaghetti Salad. What is it?
Approx. 20 years ago, we had a celebration with the family.
I was with my ex-boy friend. His sisters mother in law, made a spaghetti salad and brought it to the celebration buffet.
I really fell in love with this salad. It was very simple.
A salad just made with Spagetthis, olive oil, sausage, spring onion, green capsicum, soy sauce and curry powder.
From that day on, I always made this salad, specially to BBQ occations. It is just great.
Going on ths MM journey, this salad was not an option anymore. And I was not happy about it.
Gluten free pasta is not working. except the gluten free Barilla. But they contain corn, so they are not an option.
I gave a couple of pastas a go, but non of them really worked. The next day the salad was just soggy and unpleasant to eat. And there is the soy sauce of course. What acutally adds with the curry powder, the main flavour. BUT. really all ingredients together, make this salad. The sausage is not needed at all. When I turned vegan I added vegan sausage at the beginning, but it really is not needed in the salad, it is good without it.
When I saw the black bean pasta, and that it was not stated with "contains soy". I got excited.
I gave it a go. First I cooked myself a simple pasta dish to check the noodels out. And it was pleasant to eat.
They didn't turn so soft and soggy like a lot of gluten free pastas do.
I got more excited and gave my Spagetti salad a go.
The directions on the package said to cook the noodles for 7 minutes.
But because they are so thin, I only cooked them for 5 minutes. And in my opinion, that is the perfect cooking time.
I straight away cooled them down with cold water, made the salad,
waited a day and was happy to see, the pasta kept their consistency and were still great to eat. Perfect.
I changed the salad a little bit that day and added roasted red capsicum as well.
So with this salad on my plate, a couple of homemade rissols, homemade tomato Ketchup ,...
I am ready and happy for the summer season :-)
I hope when you give my salad a go, you will like it. It sure is different. But differently good. Trust me :-)
You need for 1 serve:
150g cooked black bean spaghettis
2 small spring onions - sliced
1/2 green capscium - cut into smaller slices
1/2 red roasted capsicum*
1,5 tsp mild Curry Powder **
1 tsp Coconut Armino BBQ style
2 tsp cold pressed extra virgin olive oil
1 pinch of pink sald or sea salt
* just half red capsicums and put them with the skin up on a baking tray and roast until the skin turns black and bubbly.
Cool down and removed the skin. Done.
** the local supermarkets stock curry powders which contain fillers. Some even wheat fillers. But most of them rice flour fillers. When you try to heal from strep, stay away from it. But the good news is, Aldi stocks a mild Curry Powder, which constain no fillers, just 100% spices!
Directions:
1. cook the pasta and cool down straight away. I did that with cold water.
Dry noodles a bit in the sieve and
add pasta to a bowl.
2. Prepare capsicum and spring onions and add to the bowl.
3. Season and finish with the olive oil. Give it a good stir and store in the fridge for at least 2 hours.
4. Enjoy plain or with whatever you desire.
5. ENJOY
